Food, and all gastronomic delights, are an integral part of our life and allow us to share unique and friendly gatherings
Nicole is keen on cuisine and loves to help foodies---novices and experts alike---to discover the gastronomic treasures of the region. Her cuisine is based on authentic, local products, local duck, pork and poultry, bred in open range, fish from the ocean, farm fresh vegetables and locally produced cheese.
She loves melting influences and creating dishes inspired by her trips. Following the seasons, you will savour her bowl of fresh duck liver in figs or her salmon “à la basque”….
Yves is in charge of wines and will advise you about the surrounding “domains” of Jurançon.
Guest tables have to be booked in advance, the latter the day before. All guests will share the same menu.
The meal includes aperitif and snacks followed by first course, main course, cheeses and dessert, wine and tea/coffee.
On demand, the meal can become more gastronomic in order to discover Nicole’s more elaborated recipes such as duck liver with spices, pie in the confit of duck and in ceps, plate of “babas gascons” and its sorbet,..., all assorted with a discovery of the best south-western wines, jurançons or madirans.
Breakfasts are served under the big magnolia. It’s the perfect moment to plan the discovery day of Béarn and Pays Basque, with all the advises you’d need of course!
According to the weather, meals will take place in the dining room and its lime coated walls or outside, under the gallery.
Diner can be continued in the garden enjoying a Navarre, the only French cigar, manufactured in Navarrenx.
